- Add cottage cheese, eggs, and oats to a blender. Blend until mostly smooth.
- Let the batter rest for 3 to 5 minutes to allow the oats to absorb moisture.
- Heat a non-stick skillet over medium-low heat and lightly grease with butter or oil.
- Pour 2 to 3 tablespoons of batter per pancake onto the pan.
- Cook for 2 to 3 minutes until edges are set and bubbles form.
- Flip gently and cook another 1 to 2 minutes until golden.
- Transfer to a plate and repeat with remaining batter.
- Serve warm with toppings of choice.
