3-Ingredient Cottage Cheese Pancake Recipe

Ingredients
  

  • 1 cup cottage cheese
  • 2 large eggs
  • 1/2 cup rolled oats

Method
 

  1. Add cottage cheese, eggs, and oats to a blender. Blend until mostly smooth.
  2. Let the batter rest for 3 to 5 minutes to allow the oats to absorb moisture.
  3. Heat a non-stick skillet over medium-low heat and lightly grease with butter or oil.
  4. Pour 2 to 3 tablespoons of batter per pancake onto the pan.
  5. Cook for 2 to 3 minutes until edges are set and bubbles form.
  6. Flip gently and cook another 1 to 2 minutes until golden.
  7. Transfer to a plate and repeat with remaining batter.
  8. Serve warm with toppings of choice.
