Ingredients
  

  • 4 cups cooked chicken shredded or diced (about 1½ lbs)
  • ¾ cup mayonnaise
  • 3 tablespoons sweet pickle relish
  • 1 teaspoon yellow mustard
  • 1 tablespoon granulated sugar
  • 1 teaspoon apple cider vinegar
  • ½ cup finely diced celery about 2 stalks
  • ½ cup sliced almonds
  • Salt and black pepper to taste
  • Pinch of paprika optional

Method
 

  1. In a large bowl, whisk together mayonnaise, sweet pickle relish, yellow mustard, sugar, and apple cider vinegar until smooth.
  2. Add the cooked chicken, diced celery, and sliced almonds. Stir until everything is evenly coated.
  3. Season with salt, pepper, and a pinch of paprika if desired. Taste and adjust.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld.
  5. Serve cold on bread, lettuce wraps, or with crackers.
