Chicken Waldorf Salad

This budget-friendly Chicken Waldorf Salad is creamy, crunchy, and perfect for casual sandwich boards. Made with rotisserie chicken, apples, grapes, walnuts, and a light yogurt dressing, it's a crowd-pleasing lunch or appetizer that comes together in 20 minutes.

Ingredients
  

  • 3 cups cooked chicken shredded or diced (from a rotisserie chicken or leftovers)
  • 1 large apple cored and chopped (about 1 cup)
  • 1 cup red grapes halved
  • 1/2 cup chopped walnuts
  • 1/2 cup diced celery about 2 stalks
  • 1/3 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: fresh parsley or chives for garnish

Method
 

  1. Toast the walnuts in a dry skillet over medium heat for 3-4 minutes, stirring frequently, until fragrant. Transfer to a plate to cool completely.
  2. In a large bowl, whisk together the Greek yogurt, mayonnaise, lemon juice, salt, and pepper until smooth.
  3. Add the shredded chicken, chopped apple, halved grapes, diced celery, and cooled walnuts to the bowl. Stir gently until everything is evenly coated with the dressing.
  4. Taste and adjust seasoning with more salt, pepper, or lemon juice if desired.
  5. Serve immediately, or cover and refrigerate for at least 30 minutes to allow flavors to meld. Garnish with fresh herbs before serving, if using.
