Ingredients
  

  • 4 cups cooked chicken shredded or diced (about 1 large rotisserie chicken)
  • 3/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3/4 cup dried cranberries
  • 1/2 cup chopped walnuts toasted if desired
  • 2 celery stalks finely diced
  • 2 green onions thinly sliced

Method
 

  1. In a large bowl, whisk together mayonnaise, Dijon mustard, lemon juice, salt, and pepper until smooth.
  2. Add the shredded chicken, dried cranberries, walnuts, celery, and green onions. Stir until everything is evenly coated.
  3. Taste and adjust seasoning with more salt, pepper, or lemon juice if needed.
  4. Cover the bowl and refrigerate for at least 30 minutes (or up to overnight) to allow flavors to meld.
  5. Stir again before serving. Serve cold on sandwiches, crackers, or lettuce wraps.
