Cucumber Caprese Salad

Ingredients
  

  • 2 medium English cucumbers thinly sliced
  • 1 pint cherry tomatoes halved
  • 8 oz fresh mozzarella balls ciliegine, drained
  • 1/4 cup fresh basil leaves torn
  • 3 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • Optional: 1/4 red onion thinly sliced
  • Optional: 1 tsp honey or maple syrup

Method
 

  1. Slice the cucumbers into thin rounds and place them in a large mixing bowl.
  2. Halve the cherry tomatoes and add them to the bowl with the cucumbers.
  3. Drain the mozzarella balls and add them to the bowl along with the torn basil leaves.
  4. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper until well combined.
  5. Pour the dressing over the salad ingredients and gently toss to coat everything evenly.
  6. Let the salad sit at room temperature for about 10 minutes to allow the flavors to meld.
  7. Taste and adjust seasoning if needed, then serve immediately.
