Ingredients
  

  • 2 large English cucumbers thinly sliced
  • 1/4 cup chopped fresh dill
  • 1/4 cup thinly sliced red onion
  • 1/4 cup crumbled feta cheese optional
  • 3 tablespoons white wine vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon honey or sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Thinly slice the cucumbers and red onion, and chop the fresh dill.
  2. In a small bowl, whisk together the white wine vinegar, olive oil, honey, salt, and pepper until well combined.
  3. In a large mixing bowl, combine the sliced cucumbers, red onion, and chopped dill.
  4. Pour the dressing over the cucumber mixture and toss gently to coat everything evenly.
  5. Let the salad sit at room temperature for 5-10 minutes to allow the flavors to meld.
  6. If using, sprinkle crumbled feta cheese over the top before serving.
