Ingredients
  

  • 2 large English cucumbers or 3 medium garden cucumbers, thinly sliced
  • 1 medium red onion thinly sliced
  • 1/4 cup fresh dill chopped
  • 1/4 cup white vinegar or apple cider vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Slice the cucumbers and red onion into thin rounds using a sharp knife or mandoline.
  2. In a small bowl, whisk together the vinegar, olive oil, sugar, salt, and pepper until the sugar dissolves.
  3. In a large bowl, combine the sliced cucumbers, red onion, and chopped dill.
  4. Pour the dressing over the vegetables and toss gently to coat.
