Ingredients
  

  • 2 medium cucumbers sliced into half-moons
  • 1 pint cherry tomatoes halved
  • 4 ounces feta cheese crumbled
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 clove garlic minced
  • 2 tablespoons chopped fresh dill
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Wash and dry the cucumbers and tomatoes thoroughly.
  2. Slice the cucumbers into half-moon pieces about 1/4-inch thick.
  3. Halve the cherry tomatoes and place them in a large mixing bowl.
  4. Add the cucumber slices and crumbled feta cheese to the bowl.
  5. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dill, salt, and pepper until well combined.
  6. Pour the dressing over the salad ingredients.
  7. Gently toss everything together until evenly coated.
