Cucumber Tomato Salad with Italian Dressing

Ingredients
  

  • 2 large English cucumbers or 3 regular cucumbers
  • 1 pint cherry tomatoes halved
  • 1/2 red onion thinly sliced
  • 1/2 cup pitted Kalamata olives optional
  • 1/2 cup fresh basil leaves torn
  • 1/2 cup good-quality Italian dressing store-bought or homemade
  • For homemade dressing: 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

  1. Wash and dry the cucumbers. If using English cucumbers, leave the skin on; if using regular cucumbers, peel partially or fully. Slice into half-moons about 1/4-inch thick.
  2. Halve the cherry tomatoes and thinly slice the red onion.
  3. In a large bowl, combine the sliced cucumbers, halved tomatoes, sliced onion, olives (if using), and torn basil.
  4. Pour the Italian dressing over the salad and toss gently to coat all ingredients evenly.
  5. Let the salad sit at room temperature for 10 minutes to allow flavors to meld.
  6. Taste and adjust seasoning with additional salt or pepper if needed. Serve at room temperature or chilled.
