Cucumber & Tomato Salad with Vinegar Dressing

Ingredients
  

  • 2 medium cucumbers thinly sliced
  • 1 pint cherry tomatoes halved or quartered
  • 1/2 medium red onion thinly sliced
  • 1/4 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 small garlic clove minced
  • 1/4 cup chopped fresh dill or parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Wash and dry the cucumbers and tomatoes thoroughly.
  2. Slice the cucumbers into thin rounds, about 1/4-inch thick.
  3. Cut the cherry tomatoes in half or quarters depending on their size.
  4. Thinly slice the red onion into half-moons.
  5. In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, salt, and pepper until well combined.
  6. Place the sliced cucumbers, tomatoes, red onion, and chopped herbs in a large mixing bowl.
  7. Pour the dressing over the vegetables and gently toss everything together until evenly coated.
  8. Let the salad sit at room temperature for at least 10 minutes to allow the flavors to meld before serving.
  9. Taste and adjust seasoning with additional salt or pepper if needed.
  10. Serve immediately or refrigerate for later use.
