Ingredients
  

  • 4 cups seedless watermelon cut into 1-inch cubes
  • 2 medium cucumbers sliced into half-moons
  • 4 ounces feta cheese cubed
  • 1/4 cup fresh mint leaves roughly chopped
  • 3 tablespoons fresh lime juice from about 2 limes
  • 2 tablespoons extra virgin olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Method
 

  1. Cut the watermelon into 1-inch cubes, removing any seeds if necessary.
  2. Slice the cucumbers into half-moon pieces about 1/4-inch thick.
  3. Cube the feta cheese into small pieces using a sharp knife.
  4. Roughly chop the fresh mint leaves.
  5. In a small bowl, whisk together the lime juice, olive oil, salt, and black pepper until well combined.
  6. Place the watermelon, cucumber, feta, and mint in a large mixing bowl.
  7. Pour the dressing over the salad ingredients.
  8. Gently toss everything together until evenly coated with dressing.
  9. Let the salad sit at room temperature for 5-10 minutes before serving to allow flavors to meld.
