Curry Chicken Salad

Ingredients
  

  • 3 cups cooked chicken shredded (about 1 rotisserie chicken)
  • 1/2 cup plain Greek yogurt or mayonnaise
  • 1 tablespoon curry powder
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 celery stalks diced
  • 1 medium Granny Smith apple diced
  • 1/3 cup sliced almonds
  • 2 tablespoons fresh cilantro or parsley chopped

Method
 

  1. In a large bowl, whisk together yogurt, curry powder, lemon juice, honey, salt, and pepper until smooth.
  2. Add shredded chicken, celery, apple, almonds, and cilantro. Stir until well combined.
  3. Taste and adjust seasoning if needed.
  4. Cover and refrigerate for at least 30 minutes to let flavors meld.
  5. Serve chilled or at room temperature.
