Easy Chicken Salad with Mayo

Ingredients
  

  • 2 cans 12.5 oz each chunk chicken breast, drained
  • 1/2 cup mayonnaise
  • 1/2 cup finely diced celery about 2 stalks
  • 1/4 cup finely diced red onion about 1/2 small onion
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 2 tablespoons chopped fresh dill or parsley

Method
 

  1. Drain the canned chicken and place it in a medium bowl. Use a fork to break it into small shreds.
  2. Add mayonnaise, celery, red onion, lemon juice, salt, pepper, and optional herbs to the bowl.
  3. Stir everything together until well combined and evenly coated.
  4. Taste and adjust seasoning if needed. For best flavor, cover and refrigerate for at least 30 minutes before serving.
  5. Serve on bread, with crackers, or over lettuce.
