Ingredients
  

  • 4 large eggs
  • 1/2 cup cottage cheese
  • 1 tablespoon butter
  • salt to taste
  • black pepper to taste
  • chopped chives or parsley optional
  • garlic powder or smoked paprika optional

Method
 

  1. Crack eggs into a bowl, add a pinch of salt, and whisk until fully combined and slightly frothy.
  2. Gently stir in cottage cheese, leaving small curds visible.
  3. Heat a nonstick skillet over low to medium-low heat and melt butter.
  4. Pour egg mixture into the pan and let sit for about 20 seconds.
  5. Gently push eggs from edges toward the center using a spatula.
  6. Continue cooking slowly, stirring occasionally, until soft curds form.
  7. Remove from heat while eggs are still slightly glossy.
  8. Season with black pepper and add optional herbs or spices before serving.
