Ingredients
  

  • 3 cups cooked chicken breast shredded or diced (about 1 lb)
  • 1 pint cherry tomatoes halved
  • 1 English cucumber diced (about 2 cups)
  • 1 red bell pepper diced
  • 1/2 cup kalamata olives halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion thinly sliced
  • 1/4 cup fresh parsley chopped
  • 1 tablespoon fresh oregano leaves or 1 tsp dried
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. In a small bowl or jar, whisk together olive oil, red wine vinegar, lemon juice, Dijon mustard, oregano, salt, and pepper until emulsified.
  2. In a large bowl, combine the cooked chicken, cherry tomatoes, cucumber, bell pepper, kalamata olives, red onion, and parsley.
  3. Pour the dressing over the salad and toss gently until everything is evenly coated.
  4. Gently fold in the crumbled feta cheese.
  5. Let the salad sit at room temperature for 5 minutes to allow flavors to meld. Serve immediately or refrigerate.
