Preheat oven to 375°F (190°C).
Heat olive oil in a skillet over medium heat. Add onion and cook until soft. Add garlic and cook for 30 seconds.
Add ground beef and cook until browned, breaking it apart. Drain excess fat if needed.
Stir in marinara sauce and Italian seasoning. Simmer for 10 to 15 minutes, then season with salt and pepper.
In a bowl, mix cottage cheese, egg, half of the Parmesan, and a pinch of salt and pepper until combined.
Cook lasagna noodles according to package directions if not using oven-ready noodles. Drain and set aside.
Spread a thin layer of meat sauce in a 9x13 baking dish.
Layer noodles, cottage cheese mixture, meat sauce, and mozzarella. Repeat layers, finishing with sauce and remaining mozzarella and Parmesan on top.
Cover with foil and bake for 25 minutes. Remove foil and bake for another 15 to 20 minutes until bubbly and golden.
Let rest for at least 15 minutes before slicing and serving.
