Ingredients
  

  • 3 cups chopped romaine lettuce
  • 1 cup arugula
  • ½ cup cherry tomatoes halved
  • ½ cup cucumber sliced thin
  • ¼ cup red onion thinly sliced
  • ½ cup sliced black olives optional
  • ½ cup pepperoncini peppers sliced
  • ½ cup salami cut into strips
  • ½ cup pepperoni sliced or chopped
  • ½ cup mozzarella cheese cubed or shredded
  • ¼ cup grated parmesan cheese
  • ½ teaspoon dried oregano
  • ¼ teaspoon black pepper
  • For the dressing: 3 tablespoons olive oil 1 tablespoon red wine vinegar, 1 teaspoon Dijon mustard, ½ teaspoon garlic powder, pinch of salt

Method
 

  1. Step 1: Build the base by adding chopped romaine and arugula into a large mixing bowl and tossing lightly to combine.
  2. Step 2: Add fresh vegetables including cherry tomatoes, cucumber, red onion, olives, and pepperoncini, spreading them out evenly.
  3. Step 3: Layer in meats and cheese by adding salami, pepperoni, mozzarella, and parmesan across the top.
  4. Step 4: Mix the dressing by whisking together olive oil, red wine vinegar, Dijon mustard, garlic powder, and salt in a small bowl until thickened.
  5. Step 5: Toss and finish by pouring dressing over the salad, tossing gently until coated, and sprinkling with dried oregano and black pepper.
