Ingredients
  

  • 4 cups cooked chicken shredded or diced (about 1.5 lbs)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream or plain Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 cup finely diced celery
  • 1/4 cup finely diced red onion
  • 1/3 cup sliced almonds or pecans toasted if desired
  • 2 tablespoons chopped fresh parsley or dill optional
  • Salt and black pepper to taste

Method
 

  1. In a large bowl, whisk together mayonnaise, sour cream, lemon juice, and Dijon mustard until smooth.
  2. Add the shredded chicken, celery, red onion, nuts, and fresh herbs if using. Stir until everything is evenly coated with the dressing.
  3. Season with salt and pepper to taste. Start with 1/2 teaspoon salt and 1/4 teaspoon pepper, then adjust.
  4. Cover and refrigerate for at least 30 minutes to allow flavors to blend. Serve chilled.
