Mango Cucumber Salad with Lime Dressing

This refreshing mango cucumber salad is tossed with a zesty lime dressing and fresh herbs. It's the perfect make-ahead side for busy weeknights or summer gatherings.

Ingredients
  

  • 2 ripe but firm mangoes preferably Ataulfo, peeled and cubed
  • 1 large English cucumber halved lengthwise and sliced into half-moons
  • 1/4 cup thinly sliced red onion optional
  • 1/4 cup fresh cilantro leaves chopped
  • 3 tablespoons fresh lime juice from about 2 limes
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon honey or agave nectar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of red chili flakes optional

Method
 

  1. In a small bowl, whisk together lime juice, olive oil, honey, salt, pepper, and chili flakes until well combined.
  2. In a large bowl, combine cubed mango, sliced cucumber, red onion (if using), and cilantro.
  3. Pour the dressing over the salad and toss gently to coat everything evenly.
  4. Let the salad rest for 5 minutes at room temperature to allow flavors to meld.
  5. Serve immediately or refrigerate for up to 3 days.
