Simple Chicken Salad

This creamy, crunchy chicken salad comes together in minutes and is perfect for meal prep. Make a batch on Sunday and enjoy easy, delicious lunches all week.

Ingredients
  

  • 3 cups cooked chicken shredded or diced (about 1 rotisserie chicken)
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1/2 cup finely diced celery about 2 stalks
  • 1/4 cup finely diced red onion
  • 2 tablespoons chopped fresh parsley
  • Salt and freshly ground black pepper to taste

Method
 

  1. In a large bowl, whisk together mayonnaise, Dijon mustard, and lemon juice until smooth.
  2. Add the shredded chicken, diced celery, red onion, and parsley to the bowl.
  3. Stir until all ingredients are evenly coated with the dressing.
  4. Season with salt and pepper to taste. Adjust lemon juice or mustard if desired.
  5. For best flavor, cover and refrigerate for at least 30 minutes before serving.
  6. Serve chilled on bread, crackers, lettuce wraps, or over greens.
