Ingredients
  

  • 3 cups cooked smoked chicken shredded or diced
  • 1/2 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup diced celery about 2 stalks
  • 1/2 cup diced apple such as Honeycrisp or Granny Smith
  • 1/3 cup chopped pecans or walnuts
  • 2 tablespoons chopped fresh parsley

Method
 

  1. In a large bowl, whisk together mayonnaise, Greek yogurt, Dijon mustard, lemon juice, salt, and pepper until smooth.
  2. Add the shredded smoked chicken, diced celery, diced apple, chopped pecans, and parsley. Stir gently until everything is evenly coated.
  3. Taste and adjust seasoning, adding more salt, pepper, or lemon juice as needed.
  4. For best flavor, cover and refrigerate for at least 30 minutes before serving.
  5. Serve on bread, in lettuce cups, or with crackers.
