Soft Cottage Cheese Cookies

Ingredients
  

  • 1 cup full-fat cottage cheese blended smooth
  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Optional: 1/2 cup chocolate chips or raisins

Method
 

  1. Blend cottage cheese until smooth; set aside.
  2. Cream softened butter and sugar until light and fluffy, about 2-3 minutes.
  3. Mix in egg, vanilla, and blended cottage cheese until smooth.
  4. In a separate bowl, whisk flour, baking powder, baking soda, and salt. Gradually add to wet ingredients, mixing just until combined. Fold in chocolate chips or raisins if using.
  5. Preheat oven to 350°F (175°C). Scoop tablespoon-sized portions onto a lined baking sheet.
  6. Bake for 10-12 minutes until edges are lightly golden. Cool on pan for 5 minutes before transferring.
