Soft Homemade Strawberry Cookies Recipe

Ingredients
  

  • 1 cup fresh strawberries finely chopped
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Method
 

  1. Finely chop strawberries and blot with paper towels to remove excess moisture.
  2. In a bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add egg and vanilla extract, mixing until combined.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually add dry ingredients to wet ingredients and mix until just combined.
  6. Gently fold in the chopped strawberries.
  7. Scoop dough onto a lined baking sheet, leaving space between each cookie.
  8. Bake at 350°F (175°C) for 10 to 12 minutes until edges are set and centers remain soft.
  9. Let cool on the baking sheet for a few minutes, then transfer to a wire rack.
