- In a large bowl, whisk together Greek yogurt, mayonnaise, lime juice, minced chipotle, salt, and pepper until smooth.
- Add shredded chicken, cilantro, mint, chives, and any optional add-ins (red onion, celery, nuts/seeds).
- Stir until chicken is evenly coated. Taste and adjust seasoning—more chipotle for heat, more lime for tang, or salt if needed.
