Ingredients
  

  • 3 cups cooked shredded chicken from rotisserie or leftover
  • 1/2 cup plain Greek yogurt full-fat or 2%
  • 2 tablespoons mayonnaise
  • 1 tablespoon fresh lime juice
  • 1 –2 teaspoons minced chipotle pepper in adobo adjust to taste
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons chopped fresh mint
  • 2 tablespoons chopped fresh chives
  • 1/4 cup diced red onion optional
  • 1/4 cup diced celery optional
  • 1/4 cup toasted almonds or sunflower seeds optional

Method
 

  1. In a large bowl, whisk together Greek yogurt, mayonnaise, lime juice, minced chipotle, salt, and pepper until smooth.
  2. Add shredded chicken, cilantro, mint, chives, and any optional add-ins (red onion, celery, nuts/seeds).
  3. Stir until chicken is evenly coated. Taste and adjust seasoning—more chipotle for heat, more lime for tang, or salt if needed.
  4. Cover and refrigerate for at least 15 minutes to let flavors meld. Serve chilled or at room temperature.
