Strawberry Cucumber Salad with Mint

Ingredients
  

  • 1 pound fresh strawberries hulled and sliced
  • 1 large English cucumber sliced into half-moons
  • 1/4 cup fresh mint leaves chopped
  • 3 tablespoons fresh lime juice
  • 2 tablespoons honey or agave for vegan
  • 2 tablespoons extra-virgin olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Method
 

  1. Wash and dry the strawberries and cucumber. Hull the strawberries and slice them into thin rounds or quarters. Slice the cucumber into half-moons about 1/4-inch thick.
  2. Chop the mint leaves finely.
  3. In a small bowl, whisk together lime juice, honey, olive oil, salt, and pepper until emulsified.
  4. In a large bowl, combine the sliced strawberries, cucumber, and chopped mint.
  5. Pour the dressing over the salad and toss gently to coat.
  6. Let the salad sit for 5 minutes at room temperature to allow flavors to meld. Serve immediately or refrigerate until ready to serve.
