Sushi Cucumber Salad with Avocado

Ingredients
  

  • 2 English cucumbers thinly sliced
  • 1 teaspoon salt
  • 2 ripe avocados diced
  • 3 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon sugar
  • 2 green onions thinly sliced
  • 2 tablespoons toasted sesame seeds
  • Fresh cilantro for garnish optional

Method
 

  1. Place sliced cucumbers in a colander and toss with salt. Let sit for 10 minutes to draw out excess moisture, then pat dry with paper towels.
  2. In a small bowl, whisk together rice vinegar, sesame oil, grated ginger, and sugar until the sugar dissolves completely.
  3. Gently combine the dried cucumbers, diced avocado, and green onions in a large mixing bowl.
  4. Pour the dressing over the cucumber mixture and toss carefully to coat everything without mashing the avocado.
  5. Transfer to a serving dish and sprinkle with toasted sesame seeds. Garnish with fresh cilantro if desired.
  6. Serve immediately or refrigerate for up to 30 minutes before serving for optimal texture.
