Waldorf Chicken Salad

Ingredients
  

  • 3 cups cooked chicken diced (about 1 lb)
  • 1 medium apple Honeycrisp or Granny Smith, cored and diced
  • 1 cup red seedless grapes halved
  • 1/2 cup toasted walnuts chopped
  • 2 celery stalks diced
  • 1/2 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 2 tablespoons chopped fresh parsley or chives

Method
 

  1. In a large bowl, whisk together mayonnaise, Greek yogurt, lemon juice, Dijon mustard, salt, and pepper until smooth.
  2. Add the diced chicken, apple, grapes, walnuts, and celery to the bowl.
  3. Fold gently with a spatula until everything is evenly coated with the dressing.
  4. Taste and adjust seasoning if needed. Stir in fresh herbs if using.
  5. Cover and refrigerate for at least 30 minutes to let the flavors meld.
  6. Serve cold on bread, in lettuce cups, or on its own.
