Watermelon Cucumber Salad

Ingredients
  

  • 4 cups seedless watermelon cut into 1-inch cubes
  • 2 medium cucumbers thinly sliced
  • 4 ounces feta cheese crumbled
  • 1/4 cup fresh mint leaves chopped
  • 3 tablespoons fresh lime juice about 2 limes
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon honey
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Method
 

  1. Cut the watermelon into 1-inch cubes, removing any seeds if your watermelon isn't seedless.
  2. Thinly slice the cucumbers. If they're particularly seedy, you can scoop out the seeds with a spoon first.
  3. In a small bowl, whisk together the lime juice, olive oil, honey, salt, and pepper until well combined.
  4. Stir in the chopped mint leaves.
  5. In a large serving bowl, combine the watermelon cubes and sliced cucumbers.
  6. Pour the dressing over the watermelon and cucumber mixture, then gently toss to coat everything evenly.
  7. Add the crumbled feta cheese and fold it in gently to avoid breaking up the watermelon too much.
  8. Let the salad rest at room temperature for 10 minutes to allow the flavors to meld.
  9. Taste and adjust seasoning if needed before serving.
